Cozy Coconut Curry

Fresh vegetables, sweet potatoes and curry spices simmered in coconut milk


Prep Time 10 Mins | Cook Time 20 Mins | Serves 4


Ingredients

2 tbsp olive oil

1 medium onion

diced 3 gloves of garlic

minced1 tbsp fresh ginger

2 tbsp curry powder

1 tbsp turmeric powder

1 medium sweet potato, peeled and cubed

1/2 of a caulifower head, cut into small forets

1/2 of a broccoli head, cut into small forets

2 medium carrots peeled and cubed

1 red bell pepper, cubed

1 can full fat coconut milk

1 lime, juice squeezed

1 tsp salt

2 cups baby spinach

Fresh chopped cilantro

3-4 cups cooked white rice


Directions

1. In a large pot, heat the oil over medium heat. Add the onion, garlic and ginger and cook for 3 minutes. Now add the curry powder and turmeric and cook for 2 minutes or until fragrant.


2. Add the sweet potato, caulifower, broccoli, carrots and red pepper, coconut milk and salt. Stir is all together and let simmer for 10 minutes or until the sweet potatoes are fork tender.


3. Now add the lime juice and spinach until it cooks down. Season more if needed.


4. Serve warm over white rice and top with fresh cilantro.


Optional: add chickpeas or tofu for some extra protein
