These Healthy Oatmeal Cookies are one of staples and are truly one of my favourites things to make. They are perfect to grab on the go and pair with a good cup of coffee. Filled with healthy fats and natural sweeteners, these cookies are super easy to make and only take 20 mins to whip up in your kitchen. The best part about this recipe is that it only requires ONE BOWL! Yes, that's right I said one bowl which means there is little clean up and preparation. Could it get any better? Yes in fact it does, these cookies are also GLUTEN FREE and DAIRY FREE.


What makes these cookies "Healthy"?


Coconut flour

Coconut flour is a gluten-free flour and made from dried coconut meat. It contains a significant amount of insoluble and soluble fibre and can help promote better digestion and the growth of healthy bacteria in you gut. It also contains a lower glycemic index rating compared to wheat flours and can help regulate blood sugar.


No refined sugars

These cookies are naturally sweetened with coconut sugar and applesauce. These alternatives have a low glycemic index and are superior to using refined sugars.


Dairy Free

Using no butter and instead coconut oil, these cookies are dairy free! As we know, dairy is quite a common intolerance for many people and can trigger many different GI symptoms therefore, to keep our tummies happy, these cookies contain no dairy and will be sure to not give you a stomach ache.


 

Healthy Oatmeal Cookies


Gluten - free and dairy -free oatmeal cookies that only take 20 mins to make! They are soft, chewy and will definitely satisfy your cookie craving!

Yields 12 Cookies










Ingredients

1/4 cup melted coconut oil, cooled

1/3 cup coconut sugar

1 egg, room temperature

1/3 cup applesauce

1 tsp vanilla extract

1/4 cup coconut flour

1/2 cup gluten free rolled oats

1/3 cup unsweetened shredded coconut

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp cinnamon

Optional add ins; 1/3 cup dried cranberries or dairy-free chocolate chips


Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper

  2. In a mixing bowl, combine coconut oil, coconut sugar, eggs, applesauce and vanilla extract. Stir until well combined

  3. To the same bowl, add the coconut flour, rolled oats, shredded coconut, baking soda, salt and cinnamon. Mix until combined and the dough comes together.

  4. Fold in the dried cranberries or chocolate chips.

  5. Scoop the dough into 12 balls and place on the lined baking sheet. Press down with the palm of your hand or a fork to spread out the cookies.

  6. Bake for 12 minutes or until golden brown. Allow the cookies to cool on a cooling rack and store in an air-tight container for up to 5 days.
